This excellent Damascus meat knife from Miyabi has a blade made of CMV60 steel, which is embedded in 64 layers of stainless steel: This steel is particularly hard and tough and therefore a good starting point for a high level of sharpness and edge retention. The blade is corrosion-resistant, has a high level of flexibility and is honed on both sides with the Honbazuke trigger. Its length is 16 cm. It is suitable for cutting and carving all types of fish and meat.
The handle is a dimensionally stable and easy-care micarta handle with a wood look made from multi-layer linen synthetic resin material combined with stainless steel. Although it does not correspond to a classic real wood handle, it is at least elegant in design and fits well in the hand.

This very inexpensive damask meat knife from Wakoli consists of a total of 67 layers of steel and has a hardness of around 58 to 62 HRC. Its total length is around 30.5 cm, with the blade being 17.5 cm long.
This is made of high-alloy hardened carbon steel and therefore offers a high level of sharpness. The knife is very well balanced and has an ergonomically shaped handle made of mikata wood (a very strong wood composite).

Kai Shun Premier Tim Mälzer damask meat knife from KAI
The damask knives from KAI are also very popular in this country. For example, one of my personal favorite Santoku knives comes from this company.
This carving knife made of Damascus steel is not much inferior to it: With a total length of 36 cm, the blade is 12 cm long and consists of a hammered surface and a total of 32 layers of steel. It is naturally corrosion-resistant and has a hardness of around 60 to 62 HRC.
As with almost all knives from KAI, the walnut handle is round, which may take some getting used to at first, but is very practical in terms of handling. Due to the double-sided cut, this Damascus carving knife is equally suitable for left- and right-handers.

MP-09 Masterpiece Damascus Slicing Knife by Kasumi Sumikama
This damask meat knife comes from Japan and is produced there by the manufacturer Kasumi Sumikama. The blade is made of VG10 steel with cobalt and a higher carbon content, resulting in a hardness of around 59 – 60 HRC.
Its handle consists of duroplastic linen hard resin, which is particularly durable through pressure and heat. Personally, I don’t particularly like the grip, but that’s a matter of taste, as you know. In my opinion, the knife is basically stable and durable. It consists of a total of 67 layers of steel (including the core layer).
The high degree of hardness enables the cutting edge to have a very long service life with very good sharpness. The Kasumi MP-09 Masterpiece is not one of the cheapest of its kind. In my opinion, however, it is of very high quality and if you are already a Kasumi fan, you will certainly enjoy this meat knife made of Damascus steel.
